The fix is a person with a boarding pass. The item travels as cabin baggage, the person clears it through customs themselves, and a named recipient signs for it at the other end. Until that signature it is legally the courier's to protect.

Five and a half hours to the Gulf, and then the interesting bit
Warsaw to Dubai is 5h 24m and Krakow to Dubai is 5h 20m. Both nonstop, both daily. The outbound is dictated by the client's deadline and it does not move.
The return can. When an assignment does not require you back at once and the schedule allows, the desk can write the return leg for up to a week after the outbound. That is a booking decision made because there is no reason to insist on an earlier seat, and it costs nobody anything.
Where it applies, several days at the destination are simply yours. Not paid, not directed by anyone, funded out of your own pocket, with the seat home already issued.

Warsaw, Krakow, and three more behind them
Warsaw shows 165 nonstop destinations on around 328 departures a day. Seoul is 9h 39m, Tokyo 10h 42m, New York 8h 36m, Chicago 9h 24m. Krakow carries 135 destinations and reaches Chicago directly at 9h 30m, which is a route the diaspora built and the freight now uses.
Gdansk holds 93 nonstops, Wroclaw 70 and Poznan 50. Those are European boards, and for short notice work inside Europe they are exactly what a desk wants: a courier who lives near the aircraft rather than three hours from it.
The consignments are what a large manufacturing economy produces. Automotive and white goods components out of Silesia and the west, machinery and tooling, furniture and specialist wood products, aerospace parts out of the Rzeszow cluster, and software and financial originals out of Warsaw and Krakow.
The passport, and the practical value of it
A Polish passport crosses most of this network without advance permission, and inside the European Union there is nothing at all to arrange. That is why a Gulf desk keeps couriers here on its list.
The verification does not fall to you. Requirements are checked against your nationality and the exact routing before an offer goes out, transit points included, and where a lane needs a permission it forms part of the assignment.
There is a north American angle worth mentioning. Both Warsaw and Krakow have scheduled United States sectors, and a courier here is therefore a candidate for transatlantic routings that a desk might otherwise have to build through a western European hub.
The honest objections
You would be a freelancer. Not employed, not on a schedule, not owed work, and free to decline anything at no cost.
That means volume cannot be promised by anybody. It follows what clients ship and nobody forecasts that. Any specific number quoted to you is fabricated.
The job also has real obligations. You keep the consignment from collection to signature, you clear it at customs personally, and the deadline is the reason a human is doing this rather than a parcel service. Where a later return has been issued, the days in the middle are unpaid and self funded. What the assignment needs is paid for: both flights, the transfers, and a hotel where the routing forces one.

02Are the American routes from Krakow real?
Krakow shows a nonstop Chicago sector in the route data. Whether an assignment uses it depends on what a client needs, but the aircraft is there.
03Is Polish or English the working language?
English, for the desk and the paperwork. Polish is useful at home and does not affect whether you qualify.
