So a person books a seat, keeps it in the cabin, walks it through customs and gives it to a named recipient who signs. Until that signature it is legally theirs to look after. The trade calls this an on board courier and it is as literal as it sounds.

No Gulf nonstop, and why that changes the arithmetic in your favour
The route data shows no Helsinki to Dubai nonstop, so an assignment from here normally routes through somewhere else. Frankfurt is 2h 17m, Istanbul 2h 59m, Doha 5h 41m, Stockholm 0h 55m. Connections are ordinary in this work and nobody treats them as a problem.
They also change the shape of a booking. A two leg routing has more parts to line up, which in practice means more slack in it, and when an assignment does not need you home immediately the desk can issue your return for up to a week after the outbound. On a connecting itinerary that is frequently the tidiest way to build it rather than an indulgence.

The Asia numbers, and why they are what they are
Helsinki shows 124 nonstop destinations on about 256 departures a day. Tokyo is 9h 46m. Bangkok is 9h 52m. Singapore is 11h 30m. Those are shorter than the equivalent sectors from anywhere further south and west, because a great circle from Finland to east Asia is simply a shorter line.
Behind Helsinki, Oulu holds 4 destinations and reaches the capital in 1h 04m, and Rovaniemi 3 at 1h 17m. Those are feeders and they are frequent, which is the only thing a feeder has to be.
The consignments follow the economy. Forestry and paper machinery components, marine and icebreaker parts, telecom and electronics hardware out of the south, mining equipment for the north, and clinical and laboratory material out of the university cities.
On documents
A Finnish passport crosses this network with very little advance permission, and inside the European Union there is nothing to arrange at all. That is what makes a courier here callable at short notice.
You are not asked to verify any of it. Entry conditions are checked against your nationality and the specific routing, including every transit point, before an offer is made. If a lane needs a permission, obtaining it belongs to the assignment.
The value to the desk is simple. Somebody who can be at Vantaa in two hours and airborne without paperwork is solving a problem nothing else solves.
The unglamorous facts
You would be a freelancer, outside any employment relationship. No roster, no minimum, no entitlement, and no consequence at all for declining an offer.
Which means nobody can honestly say how often you would fly. It depends entirely on what clients ship, and that is not forecastable. A number from anybody would be invented.
The work also has a clock on it. The consignment is your responsibility from collection to signature, you present it at customs yourself, and a connecting routing has more that can go wrong than a nonstop, which is why the desk answers the telephone at any hour. Where the return has been placed later, the extra days are unpaid and you fund them yourself.

Not really. It adds a point of failure, which is what the desk is there to manage, and it tends to add flexibility to the return date rather than remove it.
02Are the Asia lanes actually used from here?

03I live in Lapland. Is that workable?

04What if my flight is delayed and I miss the handover window?
